Yerba mate grows in the shade in the Amazon rainforest of Brazil in conditions of high humidity.
The leaves, which are harvested every two years, are carefully selected and cut. They are immediately roasted next to an open fire. This short exposure to heat deactivates enzymes, such as polyphenol oxidases, and engenders a very limited fermentation.
It has a green powdery appearance and tastes mildly bitter.
Very suitable as a stimulating drink.
