Whole cane sugar from organic farming by producers belonging to the Fair Trade program in Peru. Panela is obtained by crushing sugar cane and then evaporating its juice by heating until it crystallizes.
The main difference with industrial sugars, including brown sugar, is that it does not undergo the refining process, which is why it preserves all the nutritional properties of sugar cane, such as minerals, trace elements and vitamins.
It is dark in colour, due to the molasses, and has a sticky consistency.
