This cocoa is of the Criollo variety, the most valued for its quality, aroma, and flavor. It is characterized by being:
- Very aromatic
- Less bitter than Forastero, which is the most abundant variety
It is estimated that Criollo cocoa represents less than 3% of the world's cocoa production, due to the fact that the plant is very delicate and less productive than other varieties. Additionally, it is lactose-free and gluten-free.
