Agar-agar seaweed flakes, which is the highest quality marine gelatin, and is composed of soluble fiber extracted from the seaweed Gelidium Sesquipedale. It can be used as a thickener or gelling agent in desserts such as cakes, custards or sorbets, or in dishes to make sauces or soups. It does not provide any kind of flavour and is very rich in fibre, sodium, potassium, calcium and magnesium.
Bring ¼ litre of liquid (water, stock, milk or juice) to the boil, add a teaspoon of agar-agar and boil for 5 minutes. Pour the mixture into a mould or add to the recipe and leave to cool so that it gels.
