Quinoa is the seed of an herb native to the Andes, although it is considered a pseudocereal because of its composition and way of cooking. It contains all the essential amino acids that the body needs, vitamins (B, C, E), minerals (potassium, phosphorus, magnesium, calcium...) and more protein than any other cereal.
