Cane sugar from organic agriculture in Peru. Panela is obtained by crushing the sugar cane and then evaporating its juice through heating, until crystallization.
The main difference with other more industrial sugars, including brown sugar, is that it does not go through the refining process, which is why it retains all the nutritional properties of the sugar cane, such as:
- Minerals
- Trace elements
- Vitamins
It is considered whole, dark in color due to the molasses and has a sticky consistency.
