The Madras Curry is spicy and strong with a very marked scent and flavour. The curry powder is a mixture of 16 to 20 spices (turmeric, cinnamon, cloves, coriander, ginger, mustard, pepper,...). In addition to flavouring and giving flavour to the multiple recipes, it brings as a collateral health benefit the fact that less or no salt or sugar is used, depending on the case. Among its most outstanding properties is that it is an excellent antioxidant and helps in the acceleration of metabolism. It is also good in cases of gastrointestinal problems. It is a typical spice of Indian cuisine where a wide variety of spices are used, unlike in Western cuisine, where the curry powder seasoning is usually more standard in the spices used.
