It is a delicious and healthy alternative to sugar. Coconut sugar is made by boiling the sap of the coconut blossom until it makes a caramel, which is then air-dried and turned into sugar. The sugar is then filtered through a mesh to create a fine granulate. With its rich caramel flavour it is ideal for use as a dessert ingredient or to sweeten hot drinks, baked goods and more. The main characteristic of coconut sugar is that it is low on the glycemic index (GI). The glycemic index measures the rate at which carbohydrates are converted to glucose in the blood. Thus a low GI food will cause a small spike and a high GI food will cause a very high blood sugar spike.
