It is the most protein-rich legume. It provides 25 g of protein per 100 g (30 g if peeled). It also provides carbohydrates, fibre and a minimum amount of fat. It stands out in minerals such as magnesium, which benefits bones, muscles and the nervous system; it provides considerable doses of iron, basic for immune protection and oxygen transport.
Soak for a few hours, change the water and bring to a boil. Boil on high heat for 2 minutes and then simmer for about 45 minutes, adding a little cold water from time to time. Remove from heat before the skin opens. Can also be used for sprouting.
