It is an essential food in the regular diet thanks to its nutritional properties, promotes digestion and the ability to stimulate the purification of the body. Among its many properties it has a high chlorophyll content. The protein in barley green has 18 of the 22 amino acids, including the eight essential amino acids that the body cannot produce by itself. Barley green is thus an excellent source of protein for vegetarians, who are often lacking in their diets.
Barley green is also rich in vitamins, with 30 times more vitamin B1 than cow's milk, as well as vitamin B2, vitamin B6, large amounts of vitamin B12 and plenty of vitamin C. Barley grass is also an excellent natural source of minerals, including calcium, copper, iron, magnesium, manganese, phosphorus and potassium. Since it also offers a high amount of folic acid, pantothenic acid, carotenoids, (including beta-carotene) and organic sodium, it's no wonder it's been labeled a superfood.
