Pasta with a slight spinach flavour, made from semolina, a refined flour derived from durum wheatthat has more protein than other types of flour. Despite its refined flour, traditional pasta has a low glycemic index that is similar to whole wheat and legume pasta.

Boil in plenty of lightly salted water for 10-11 minutes. For salads, drain and rinse with cold water. To mix with sauces, just drain.
